Prepare the Batter
Take the required amount of dosa batter.
Add an equal quantity of water and mix well to achieve a smooth, pourable consistency.
Prepare the Tempering
Heat 2 tablespoons of oil in a pan.
Add a pinch of mustard seeds, a teaspoon of urad dal, and a few fresh curry leaves.
Once they crackle and turn aromatic, add finely chopped coconut, ginger, and onion.
Sauté until golden brown.
Mix the Flavors
Add the tempered mixture to the diluted dosa batter.
Mix thoroughly.
Add a little water and salt, if needed, to adjust the consistency and taste.
Cook the Dosa
Heat the dosa tawa (stone/griddle) until it is dry and hot.
Pour 2 ladles of the batter onto the center and gently spread it into a circle.
After a few seconds, drizzle oil around the edges.
Cook until the bottom is crisp and golden.
Flip the dosa and cook the other side briefly.
Serve
Remove from the tawa and serve hot.
Best enjoyed with fresh coconut chutney and a sprinkle of our Idly Powder.
